Slow brewing methods (known as "pour-overs"), which allow you to brew one cup of coffee at a time, such as the plastic Mellita or the ceramic Hario V60, are quick and easy ways to enjoy filter coffee while maintaining control over the extraction settings.

With freshly roasted coffee and the right grind, you'll be satisfied with every cup!

At Bivouac, we recommend using a very coarse grind (even coarser than for an electric or French press) for these manual coffee makers.

Here's our simple brewing method:

  • Install a conical paper filter and moisten it with water
  • Put about 18g of ground coffee into the filter (for a 300ml cup).
  • Place the coffee maker on the cup.
  • Cover the ground coffee with a little hot water (94°C) and wait 30 seconds. (When the water in your kettle boils, it's best to wait 2 minutes before pouring it over your coffee, otherwise it will be too hot.)
  • Gradually add 300ml of hot water (about 50ml at a time) using a rotating motion (for this step, a kettle with a gooseneck spout allows you to pour the water more delicately and precisely over the coffee).
  • Wait for the coffee to flow naturally into the cup.

*The whole brew should not take more than 4 minutes in total, if it is faster it means the grind is too coarse and if it is slower it means the grind is too fine!
