This is a favorite coffee selected by Mélanie, owner of Bivouac, during her origin trip to Ethiopia in the winter of 2025. With Cooperative Coffees' delegation, during a visit to the headquarters of OCFCU (Oromia Coffee Farmers Cooperative Union) in Addis Ababa, these beans stood out greatly on the tasting table.

The Guji region of Ethiopia is a high-altitude coffee-growing area renowned for its specialty coffees, grown on rolling plateaus thanks to often organic and artisanal farming methods by small producers, with drying on raised African beds. The region is deeply linked to the Oromo culture, a rich culture centered on nature and rituals, which holds strong identity and economic importance for the inhabitants.

The coffee we offer comes from the Dhaka Bor Banti cooperative, is a heirloom variety, and is naturally dried. The plantation is located at a very high altitude. Its flavor profile is highly aromatic and complex, with floral notes (hibiscus, bergamot) and fruity notes (red berries), with a delicate acidity.
