Invented by a chemist to improve coffee preparation based on artistic and scientific criteria, this elegant coffee maker is a beautiful alternative to drip coffee makers.
The Chemex filter is triple-layered, making it more efficient than traditional paper filters. It retains more sediment and prevents it from ending up in the cup. This results in a clean, aromatic, and delicate cup of coffee, and it's sure to impress everyone!
At Bivouac, this is truly our go-to coffee maker when we make coffee in the workshop. It's our favorite morning ritual!
Here's our simple preparation method (the grind should be as coarse as possible, like a percolator):
- Place the filter in the Chemex so that the triple layer is facing the spout and moisten it with water.
- Add approximately 35g of ground coffee, for a 6-cup Chemex (500ml of water).
- Cover the ground coffee with a little hot water (94°C) and wait 30 seconds. (When the water in your kettle boils, it's best to wait 2 minutes before pouring it over your coffee, otherwise it will be too hot.)
- Gradually add 500ml of hot water (approximately 50ml at a time) using a rotating motion (for this step, a kettle with a gooseneck spout allows you to pour the water more delicately and precisely over the coffee! It's an essential accessory in our opinion!)
- Wait for the coffee to naturally drip into the glass carafe and serve.
*The whole brew should not take more than 5 minutes in total, if it is faster it means the grind is too coarse and if it is slower it means the grind is too fine!
